I couldn't believe the way his knee and ankle bent like a pretzel. and he actually stood up after. I was expecting a MCL or ACL ligament tear and bruising after that fall.

Yeah he has 4 fights left on his contract with the UFC... Maybe we can see him vs. Chiek Kongo for a good stand up battle, or better yet maybe he can end Tim Sylvia's life.
As for the kick, I don't know how you can say it wasn't that great, it was beautifully executed.

Text-book reason why you do not block low kicks with your hands... don’t drop those hands Mirko.

Like this - full hip rotation, lean slightly back instead of hunching forward this will help ensure full power is delivered with the kick and contact is made with the shin rather then the instep of the foot. That being said full hip rotation is generally not seen with heavy-weights.
Thats my 2 cents.

Although he is definitely not a K-1 level kickboxer, the kick was still great, and I definitely do see his hips turn.... what makes it look really ugly is how he loses his balance a bit after the kick lands.
